Zero sugar is the key

The new beer starts from the brewing process of Ambar Triple Zero Tostada, based on complete fermentations in which all the sugars in the wort are transformed into alcohol. Subsequently, this alcohol is removed through a high vacuum and low temperature distillation system, which preserves the characteristic flavor, body, and aroma. Then, probiotics are incorporated into this base without residual sugars, an essential condition, since if the beer had sugar, the bacteria would activate before reaching the intestine and die. Only in a sugar-free environment do they remain dormant – in spore form – and awaken where they should: in the intestine.

The strain used to achieve this and developed by Novonesis – a world leader in biotechnology – is Bacillus subtilis HU58, which forms spores that act as a natural structure allowing it to resist passage through the stomach and activate in the intestine, where it performs its function on the microbiota. In addition to probiotic bacteria, Ambar Triple Zero Tostada contains prebiotic fiber that feeds the microbiota.

This launch comes at a very symbolic moment: the 50th anniversary of Ambar Sin, the first alcohol-free beer in Spain.
